Varsity restaurant Signature Dish has introduced new opening hours for dinner service on Friday and Saturday nights.
The owners are hoping their innovative approach to cooking will attract customers from all areas of the Gold Coast.
Head chef Jesse McTavish said that what set their restaurant apart was their passion for quality ingredients.
“We focus on food inspired by providence and integrity … and knowing where every single ingredient is from,” he said.
Mr McTavish said that educating diners on the origin of the food they eat was important too.
“I go out with my fisherman when I get a chance, and fish with them to see how the fish is treated, so I know the fish that I’m serving that night is incredible quality,” he said.
“The same applies for avocados, the same applies for tomatoes, everything.”
Varsity Lakes resident Emily Tarbit said it was important for her to know where her food is coming from.
“I’ve heard a lot on the news lately about imported foods, and how bad the quality is compared to local ingredients,” she said.
“It’s made me especially conscious about what is put on my plate, and I’ve started to question where the food comes from when I go out to eat.”
Mr McTavish’s recipes can be heard monthly on Coast FM’s Mornings with Nicole Dyer and the restaurant will be open from 6pm on Fridays and Saturdays.
